Butterfly the chicken so it is even in thickness.
Mix the buttermilk with 1 tbsp of the hot sauce, half a teaspoon of smoked paprika and the garlic granules. Add the chicken and leave to marinate for at least 30 minutes.
In a shallow bowl, combine the flour, cornflour and the remaining smoked paprika with a pinch of salt.
Remove the chicken from the buttermilk, let the excess drip off, then coat well in the flour mixture, pressing it in firmly.
Spray both sides lightly with olive oil spray.
Air fry at 200°C for 18 to 20 minutes, turning halfway, until golden and cooked through.
Warm the buns in the air fryer for a couple of minutes.
Mix the remaining hot sauce with the honey and brush over the cooked chicken.
Top with a slice of cheese and return briefly to the air fryer to melt.
Build the burgers with mayonnaise, shredded lettuce, gherkins and the cheesy buffalo chicken.
