Cook the rice as per the pack instructions, then drain well.
Cook the sausages until browned and cooked through, then slice.
Put a pan on a medium heat with a splash of oil and fry the onion for 5 minutes until softened.
Add the garlic and cook for 1 minute.
Add the broccoli and a small splash of water, cover with a lid and steam for 3–4 minutes until bright green and just tender.
Stir the cooked rice into the pan, then pour in the stock and stir well.
Add the soft cheese and stir until melted and creamy.
Stir through the sliced sausages.
Tip into a baking dish, scatter over the Red Leicester, then bake at 200°C (180°C fan) for 15–20 minutes until golden and bubbling.
Finish with parmesan and plenty of black pepper.
