Halloumi & pepperoni linguine
INGREDIENTS
300g dried linguine
225 block of halloumi, sliced
120g sliced pepperoni
1 small red onion, finely diced
1/2 orange pepper, finely diced
1 tsp garlic purée
Pinch of chilli flakes
1 tbsp sweet chilli sauce
80ml single cream (I used Elmlea)
15g grated Parmesan
1 sliced spring onion
225 block of halloumi, sliced
120g sliced pepperoni
1 small red onion, finely diced
1/2 orange pepper, finely diced
1 tsp garlic purée
Pinch of chilli flakes
1 tbsp sweet chilli sauce
80ml single cream (I used Elmlea)
15g grated Parmesan
1 sliced spring onion
METHOD
Cook the linguine, drain and set aside, saving a splash of pasta water for later
Spray some oil into a frying pan and fry the halloumi until golden, turning over halfway then remove and set aside
Add the pepperoni into the same pan, fry for a minute then remove
Add the pepper, onion, garlic, chilli flakes and a pinch of salt and pepper into the same pan and stir to soften in the oil from the pepperoni
Once softened, add the sweet chilli, cream and Parmesan and let it simmer for a minute
Add the halloumi and pepperoni back in along with cooked linguine and splash of pasta water and make sure everything is warmed through
Top with the sliced spring onion and enjoy!
