All recipesFake-Away ClubBeef & broccoli fried rice35 min 4 portionsView nutrition on NutracheckSave recipeJoin to planI cooked thisPrint cardIngredientsCooking for4200g long grain rice400g beef mince1 red pepper, diced1/2 head broccoli, chopped4 spring onions, sliced2 tbsp dark soy sauce1 tbsp rice wine vinegar (or balsamic vinegar)1 tbsp honey1 tsp garlic puree2 eggs100g curry pasteMethod1Start by cooking your rice, wash under cold water for 5 minutes first, drain and add to a pan, cover with boiling water and 1/4 tsp salt, add a lid and boil for 11-12 minutes or until cooked (long grain takes longer than basmati)2Once rice is cooked, drain and set aside to cool3To a large pan or wok, add 1/2 tbsp sesame oil, add the beef mince and fry until browned, now add in the chopped veg, stir, then add in another 1/2 tbsp sesame oil, pinch of black pepper, the garlic purée, honey, rice wine vinegar, and 1 tbsp of the soy sauce4Stir together to soften the veg, now add in the cooked rice and keep stirring5Make a space and crack in the two eggs, let it set for moment and then stir it all together to scramble!6Now just add 1 more tbsp soy sauce and stir, then it’s ready!7For the curry sauce, I used 100g curry paste, mixed with 300ml boiling water - microwave in short 1 minute blasts until thickened, stirring in between, or do it on the hob!#BeefComments Sign in to leave a comment.Be the first to leave a note.
