Air fryer lemon butter salmon

Method

   Cut the potatoes into wedges or cubes and coat in the spices, some salt and pepper and oil then airfry for 25 mins at 180°C (or oven bake for 30)

   Mix the melted butter with the garlic, the juice from 1/2 the lemon and sugar

   Add the salmon to some foil and pour the butter over, add salt and pepper

   Cut the remaining half of the lemon into slices and place on top of the salmon

   Close up the foil to make a parcel and place into the airfryer (you can place on top of the potatoes if they haven't finished yet)

   Cook at 180°C for 10-12 mins - until the salmon is cooked through (fit will depend on the size of your fillet), I like to open up the parcel for the last 4-5 minutes of cooking to get some colour on the top too, but you don't need to!

   Tip: I like to serve with some greens like peas - I usually use frozen peas and boil and drain them, then pan fry in some butter. Sometimes I mash half of them up and add in some spices like paprika, chilli and mint to make them like Nando's peas!
