Jambalaya

Method

   Fry the chicken in the olive oil.

   Once the chicken is sealed on the outside, add the onion, peppers, and chorizo.

   Stir together and add the garlic.

   Add the Cajun seasoning, stir well, then add the rice and peas.

   Once well combined, add the chicken stock and the chopped tomatoes.

   Add some black pepper, stir, then put the lid on and let it simmer for around 20 minutes on medium-low heat, stirring occasionally.

   Once most of the liquid has evaporated, turn off the heat and serve!
