Sausage stronganoff

Method

   Slice up the chorizo and fry off with a little olive oil in a pan for a couple of minutes

   Add the onion to the pan, fry for a couple of minutes, then add the mushrooms and garlic

   Add beef stock and black pepper

   Let simmer away for a few minutes, then add the Dijon mustard and stir

   Let the stock reduce for around 5 minutes

   Add in the sliced, cooked sausages

7. 7

   Mix everything well, then add the sour cream and paprika

8. 8

   Let everything simmer together and thicken for 5-10 minutes, sprinkle with a little dried parsley for some colour then serve with the cooked pasta!
