Sweet and sour pork meatballs

Method

   Start by making the meatballs, in a bowl add the pork mince, onion, chillies, garlic, salt and pepper, ginger paste, panko breadcrumbs and the egg, mix together and form into 12 balls.

   Fry off the meatballs in a little oil until browned and cooked through then take out of the pan and set aside.

   Make the sweet and sour sauce in a bowl by mixing the ketchup, dark soy sauce, rice wine vinegar (you can use malt vinegar if you don't have rice wine) garlic puree, sriracha and the sugar.

   To the pan, add in the chopped peppers and fry for a few minutes, add the pineapple chunks, you can also add a few tbsps of the juice.

   Now add the sauce mix and stir, bubble for a few mins to thicken, add the meatballs and cook everything together for 5 minutes, add in the cooked noodles and stir through, you can add a splash of water to loosen, serve between 4 bowls and enjoy!
