Chimichanga

Method

   Fry the chicken breasts whole in some frylight with the garlic and chilli

   Add the peppers and seasoning mix after a few minutes

   Turn the chicken to seal all over - it doesn’t need to be cooked inside yet!

   Put the chicken and peppers in an ovenproof dish and place in the oven at 200°C for 20 minutes, or until golden and fully cooked

   Pull the chicken apart with a couple of forks and mix with the beans and the cheddar (grated)

   Share the chicken mixture between the two wraps and wrap tightly

   Fry the wraps in some olive oil, place seam side down and then flip to get colour on all sides

   Serve with Mexican rice, salsa, sour cream, guacamole and some sliced spring onion
