Boursin stuffed chicken

Method

   Slice the chicken breast lengthways to make a pocket, but don't cut all the way through, rub it with olive oil, oregano, paprika, chilli flakes and season with salt/pepper

   In a bowl mix together the mozzarella, sun-blushed tomatoes, Boursin and spinach

   Stuff the chicken with the mixture and transfer to a baking dish

   Cover the baking dish and bake for 30 minutes at 180°C, then remove the foil and bake for another 10 minutes - slice and serve!

   Delicious with sweet potato mash and tender-stem broccoli - I boiled 200g peeled sweet potatoes for 10 minutes, and also a grill, then mixed with a little butter and salt and pepper!
