Hunter's chicken jacket potato

Method

   Stab the potatoes with a knife and microwave for about 15 minutes until beginning to soften.

   Rub salt and oil onto the potatoes and bake in the oven at 190°C for 35 minutes, or air fry for 25 minutes.

   Season the chicken breasts with BBQ seasoning (see tip for homemade).

   Spray with oil and bake for 25 minutes, or air fry at 180°C for 25 minutes.

   Cook the bacon (pan fry, grill, or air fry). Once cooked, place on kitchen paper to cool and crisp, then chop.

   Shred the cooked chicken with 2 forks and mix in the BBQ sauce and most of the bacon (reserve some for topping).

   Add cheese on top of the shredded BBQ chicken and bake or air fry until melted (about 5 minutes).

   Once potatoes are cooked, spoon the chicken mixture into them (optionally add butter, salt, and pepper first).

   Top with remaining crispy bacon and serve with peas.
