Boursin Broccoli soup

Method

   Fry the onions in some spray oil until softened

   Add in the broccoli and garlic, season with salt and pepper, and cook for another couple of minutes

   Add in the diced potato and stock, put the lid on the pan, and leave to simmer for about 20 minutes - until the potato has softened

   Transfer the soup to a blender (or use a stick blender) with the Boursin (save a little bit of Boursin to sprinkle on top of the soup if you like) and blend until smooth - add more stock if it's too thick for you

   Add the soup back to the pan and heat gently - check the seasoning. I like to add some more salt, black pepper and chilli flakes here but skip chilli flakes if you don't like spice!

   Serve the soup with a sandwich or some croutons - you can make your own croutons like I have by chopping up a garlic baguette into cubes, sprinkling with cheddar, and air frying or oven baking at 190°C for about 8 minutes until crispy
