Chorizo party pasta

Method

   Chop up the chorizo slices and fry in a little olive oil

   Add the onion

   Chop up the vegetables and add these once the onion has softened

   Add in the garlic, chilli flakes and oregano and stir

   Add the vinegar and reduce

   Add the chopped tomatoes, then fill the empty can halfway with water and pour in

   Add the tomato purée and stir

   Add a sprinkle of sugar, salt and pepper, loosely cover and let simmer for 30 minutes, adding the cherry tomatoes after about 25 minutes

   Cook the pasta in boiling water, drain and set aside

    Stir the pasta in to the sauce, serve with the parmesan and your favourite garlic bread
