Mac & cheese bolognese bake

Method

   Start by boiling the pasta in salted water until just al dente (around 9 minutes), drain and set aside

   In a large pan, melt the butter, add the flour and whisk together for a few minutes to form a paste. Gradually start adding the milk, keep whisking and adding more milk until it starts to thicken (takes around 10 minutes)

   Now turn off the heat, add the mustard, a pinch of salt and pepper, and 3/4 of the red Leicester cheese and cheddar

   Stir until cheese has melted, add the cooked pasta, stir again to coat. If it seems a little thick, you can add a splash of water or milk!

   Add to a dish, sprinkle remaining cheese on top as well as the parmesan

   Place under the grill until bubbling and golden! Serve and enjoy!
