Creamy pesto pasta

Method

   Boil the pasta in salted water until cooked al dente then drain and set aside

   Add a little spray oil to a frying pan and fry the chicken until sealed (doesn't have to be cooked all the way through as it will keep cooking) Next, add the garlic purée, a pinch of pepper, the onion and the red pepper and fry for a few minutes, stirring occasionally

   Mix the stock cube with 250ml of boiling water and add the pesto, the chilli flakes and the stock to the pan, give it a good stir and let it simmer for 5 minutes

   Add the soft cheese and the pasta and mix altogether, let it all heat through and then add the grated mozzarella and turn off the heat

   Mix together well then serve between 4 bowls and Enjoy.
