Mini cheesecakes

Method

   Divide the crushed shortbread into 2 glass jars/bowls and push down to the bottom with the back of a spoon until tightly packed in

   In a separate bowl, mix the soft cheese with the cream, vanilla extract and icing sugar

   Layer the cheesecake mixture on top of the shortbread

   Add any toppings you wish and enjoy!
