Chicken parmigiana pasta bake

Method

   Fry onion with spray oil, add oregano, basil, seasoning, garlic purée, tomato purée, passata and sugar. Simmer 20 mins until thickened

   Slice chicken breasts in half, pat dry, season and coat with mayonnaise

   Mix breadcrumbs with 10g Parmesan, oregano and pepper. Coat chicken pieces

   Air fry chicken 20 mins at 180°C, turning halfway, spraying with oil until golden

   Cook pasta per packet instructions, drain and mix with most of the sauce in an ovenproof dish

   Add remaining Parmesan and 30g mozzarella, bake 15 mins at 180°C

   Top cooked chicken with remaining sauce and mozzarella, air fry 5 mins at 180°C until bubbling

   Slice chicken, place on pasta bake and serve
