Butter chicken curry

Method

   Coat the chicken pieces in the yoghurt, cumin, and 1 tsp each of the chilli powder, garam masala, garlic purée, and turmeric. Leave to marinate overnight

   Once marinated, heat the olive oil in a pan and fry the chicken until golden it doesn't have to be cooked through yet!

   Set the chicken aside and add the butter to the pan

   Add the onion to the pan once the butter has melted and fry for 5 minutes

   Next, add the ginger as well as the rest of the garlic, garam masala, turmeric, and chilli powder to the pan and cook together for a few minutes

   Add the passata and the cream with a pinch of sugar and stir

   Add chicken back to the pan and simmer for about 10 minutes, then serve
