BBQ sausage traybake

Method

   Spray the potatoes with plenty of spray oil and add salt and pepper

   Cook the potatoes in a large roasting dish in the oven at 200°C for 15 minutes before everything else is added

   Wrap each sausage in a bacon medallion

   Add the red onion, peppers, and broccoli to the dish with the potatoes after 15 minutes spray with more cooking spray

   Add the garlic puree and mix, then put the sausages on top and return to the oven for 30 minutes

   Mix the BBQ sauce with some water to make it looser

   Once the chicken sausages are cooked, remove from the oven and top with the sauce, mozzarella, and broccoli (you can cook the broccoli in the microwave to make it softer)

   Return to the oven until the cheese is melted, then serve and enjoy.
