Nando's Fino Pitta

Method

   Put the butterflied chicken breast in a bowl with the marinade, coat well, cover and place in the fridge until ready to cook.

   Remove the chicken from the fridge and fry in a griddle pan with a little spray oil.

   Halfway through cooking the chicken, add the halloumi slices to the pan and fry until brown on both sides.

   Once everything is cooked, remove from the heat.

   Make the garlic mayo by mixing the mayonnaise with the garlic granules.

   To assemble, slice the pitta bread in half lengthways. Spread the garlic mayo on one side, add the chicken, halloumi, red onion chutney, and lettuce and close. Serve with your favourite sides and enjoy!
