All recipesComfort ClubCaramelised Onion and Chicken Loaded Potatoes40 min 4 portionsSave recipeJoin to planI cooked thisPrint cardIngredientsCooking for41kg potatoes, cubed (skin on)350g chicken breast, chopped into small pieces2 tsp smoked paprika2 tsp oregano1 tsp onion granules1 tsp garlic granules1/2 tsp thyme2 white onions, sliced1 tbsp butter50ml balsamic vinegar1 tbsp sugar100g grated mozzarellaMethod1First season the diced potatoes with the smoked paprika, onion granules, garlic granules, oregano, and salt and pepper to taste.2Spray with some oil, then air fry at 190°C for 18 minutes- or oven bake for 25 minutes at the same temperature, shaking halfway through3Meanwhile, add the onions to a pan with some butter, add some salt and cook on a low heat for around 15 minutes, stirring every now and again- until they're softened and golden in colour4Whilst the onions and potatoes cook, coat the chicken in the thyme, remaining paprika and oregano, and some salt and pepper5Fry in some spray oil until the chicken is cooked through and has a nice golden brown colour on the outside - you could also air fry for 12 mins at 180°C6Once the onions have softened, add in the balsamic vinegar and sugar, and cook on a medium heat until sticky7Once everything is ready - layer your potatoes, then onions, then chicken, then cheese in an oven proof dish, and place in the oven for 10 minutes at 180°C - until the cheese melted and everything is piping hot8These are delicious served with a side salad or some green veg like broccoli or peas!#ChickenComments Sign in to leave a comment.Be the first to leave a note.
