Red pepper arrabbiata

Method

   Chop up the pepper and onion roughly and put in the bowl of a food processor with the garlic and blitz (or chop the pepper, onion and garlic finely)

   Add the olive oil to a pan and fry off the pepper and onion mix

   Add the salt, pepper, oregano and chilli flakes

   Stir and add the balsamic vinegar, followed by the tin of chopped tomatoes. Fill the tin halfway with water and swirl around to get the rest of the tomato off the sides and add to the pan

   Stir in the sugar and leave the sauce to simmer

   Cook the pasta in salted water until it’s slightly underdone, about 8 minutes

   Drain the pasta and add it to the sauce and leave it to finish cooking in the sauce

   Top with a few basil leaves and some grated parmesan
