Air Fryer Jalapeño Popper Chicken

Method

   Mix the Philadelphia with the pickled jalapeños, sliced chilli (save 4 slices for topping), garlic purée, and a pinch of salt and pepper

   Cut a slit in each chicken breast and stuff with the Philadelphia mix, securing with toothpicks (some filling will escape - that’s fine, it’ll become the sauce!)

   Spray the chicken with oil and air fry for 20 minutes at 180°C or until cooked through

   A few minutes before it’s done, add the reserved chilli slices on top and spoon over any leftover Philadelphia

   Meanwhile, cook the mashed potato in the microwave and boil the broccoli

   Serve the chicken on top of the mash, with broccoli on the side, and drizzle over the sauce and enjoy!
