Creamy chicken with leeks

Method

   Slice the mushrooms and leeks and fry in spray oil

   Chop the chicken breasts into chunks and add to the pan with the garlic purée, some black pepper and a sprinkle of chilli flakes

   Once the chicken is sealed add the white wine and simmer for around 3 mins until reduced

   Add the chicken stock and simmer for 10-15 mins until chicken is cooked through

   Add the parmesan and creme fraiche to the pan and stir - serve with rice & garlic bread if you like and enjoy!
