Boursin arrabbiata

Method

   Fry the onion in a little olive oil, once starting to soften, add the garlic and chilli flakes (add chilli flakes to your desired spice levels - I used half a tsp)

   Stir together, add the cherry tomatoes and passata, season with salt and pepper and add the chopped basil

   Simmer the sauce for 10 minutes then add the sugar, spinach and Boursin

   Keep stirring until the spinach thaws and the cheese melts

   Meanwhile cook the pasta to packet instructions, reserve some pasta water to loosen the sauce later, drain and set aside

   Add the cooked pasta to the sauce and stir through, add a little pasta water to loosen, heat the pasta through and serve
