Creamy paprika chicken

Method

   Put the chicken in a large bowl. Add the paprika, some spray oil, a tsp of the garlic and season with salt and pepper. Mix well and leave to marinate in the fridge for an hour

   Fry the onion with a little olive oil until softened, add the marinated chicken and cook until sealed, then add the mushrooms, the rest of the garlic, the chicken stock and simmer for 10-15 minutes until the chicken is cooked through

   Meanwhile, make the rice according to the packet instructions (or see my perfect rice recipe!)

   Add the crème fraîche and Parmesan and stir well. Add the parsley and simmer until thickened, season to taste and serve with the rice and some garlic bread if you wish!
