Chorizo & leek carbonara

Method

   Mix the egg yolks with a pinch of salt and pepper, add the grated parmesan and whisk together well

   Start frying the chorizo with the leeks, (no oil needed) meanwhile boil your linguine and don’t forget to save some pasta water to add to the sauce later

   Add a small pinch of chilli flakes to the cooked leek and chorizo mix, add the drained linguine and give it a good stir, turn off the heat

   Add the egg mixture and a splash of the pasta water, mix together well, the egg will cook from the residual heat!

   Add another grating of parmesan and serve between bowls.
