All recipesFamily ClubChilli Macaroni Bake45 min 4 portionsSave recipeJoin to planI cooked thisPrint cardIngredientsCooking for4350g beef mince1 tin kidney beans, drained1 tin sweetcorn, drained1 onion, diced1 red pepper, chopped2 tsp ground cumin2 tsp smoked paprika1 tsp chilli powder (adjust to taste)1 tbsp tomato purée1 tsp garlic puréeSplash of red wine (optional)1 carton passata300g dried macaroni90g cheddar cheese, grated1 handful jalapeñosSour cream and chive dip (optional)Garlic bread (optional)Method1Preheat the oven to 200°C (180°C fan).2Cook the macaroni in salted boiling water for 5 minutes (it should be slightly undercooked as it will bake later). Drain and set aside.3Heat a large pan and fry the beef mince until browned. Add the onion, red pepper and garlic purée, cooking for 3–4 minutes.4Stir in the spices, tomato purée and a splash of red wine. Cook for 2 minutes.5Add the chopped tomatoes, kidney beans and sweetcorn. Simmer for 10 minutes, season to taste.6Combine the chilli mixture with the drained macaroni. Pour into a large ovenproof dish.7Top with grated cheddar and jalapeños.
