Pink potato salad

Method

   Mix everything (except the bacon flavour crumbles) in a large bowl until well combined, season with salt and pepper

   Serve on a large plate, topped with the bacon bits

   Note: Use non pickled beetroot as the dressing is already quite tangy, you can adjust the amount to your taste and maybe try 1-2 tbsp of the dressing first to see how you like it!
