Cheesy bean & sausage pie

Method

   Cook the sausages according to packet instructions - you can oven bake, pan fry or air fry. Once they're cooked and cool enough to handle, slice them into bite sized pieces

   Meanwhile, microwave the potato, and once it's cooked and cool enough to handle, scoop out the middle

   Fry the onion in some butter until softened

   Add the cooked potato and cheese to the pan and mix until the cheese melts, and potato is in smaller pieces - then set aside

   Make sure to use your pie dish to cut out a lid the correct size from one of the sheets of pastry before you use the dish

   Then fill the pie dish with the other sheet of pastry, trimming the edges

   Keep adding layers of the cheese mix, some beans, and some sausage into the pie, until you run out of fillings - I like to finish with some of the cheese mix to top the top of the pie

   Egg wash around the edge, then add your lid!

   Use a fork to crimp the edges, and a knife to cut 2 holes into the top of the pie

    Egg wash the lid, and oven bake at 200°C for around 20 minutes - until the pastry is golden and puffed up, and the filling melted and hot

    You could serve with some veg like peas, green beans, or something like red cabbage is nice too!
