Cheesy bites pizza

Method

   In a large bowl put 180ml warm water with the sugar and stir, put the yeast on top and leave it for a few minutes to foam up.

   Add in the oil and flour and mix until a dough forms.

   Knead the dough for a few minutes and then coat the dough in some olive oil and place in a clean bowl, cover with a damp tea towel and let the dough rise for about an hour, until doubled in size.

   Push the dough out on a 12-inch pizza pan, leaving lots of excess around the crust so that you can fold it over the cheese.

   Chop the mozzarella block into sticks and place around the edge of the pizza in a ring, fold the excess crust over the cheese pieces.

   Feel for where the cheese pieces are and cut either side, then twist the crust towards you (make sure the cheese is all covered by the dough so it doesn’t spill out whilst cooking – you can also just make it into a stuffed crust instead of the cheesy bites).

   Make the pizza sauce by mixing the tomato purée, garlic purée, oregano, basil and black pepper with a splash of water, cover the middle of the pizza with the sauce and top with the grated mozzarella and pepperoni.

   Bake the pizza at 170°C for about 15 minutes, until browned. Meanwhile make the garlic butter by mixing the butter with a little more garlic purée and some dried parsley, melt in the microwave for 10 seconds and brush on the crust of the pizza!
