Creamy broccoli pesto tortelloni

Method

   Start by frying the red onion in a little spray oil for a couple of minutes, then add in the garlic puree and stir

   Now add the chopped broccoli, pinch of salt and pepper and also a pinch of chilli flakes if you like a little kick!

   Add the stock, stir everything together, cover and let it simmer for 5 minutes or until the broccoli has cooked

   Add the pesto and cream, stir together, then add in the tortelloni, making sure its all separated

   Cover and cook for around 5 minutes to heat the tortelloni through - you can add a splash of water to loosen the sauce towards the end

   Serve between two bowls, add the Parmesan on top and enjoy!
