All recipesClub FavouritesBeef fried rice and curry sauce25 min 4 portionsSave recipeJoin to planI cooked thisPrint cardYearly members: printable PDFIngredientsCooking for4200g long grain rice500g beef mince1 red pepper, dicedRed chilli, diced (optional)1/2 head broccoli4 spring onions, sliced1 tbsp sesame oil (optional)2 tbsp dark soy sauce1 tbsp rice wine vinegar (optional)1 tbsp runny honey1 tsp garlic puree2 eggs100g curry pasteMethod1Start by cooking your rice, wash under cold water for 5 minutes first, drain and add to a pan, cover with boiling water and 1/4 tsp salt, add a lid and boil for 11 - 12 minutes or until cooked (long grain takes longer than basmati)2Once rice is cooked, drain and set aside3To a large pan or wok, add 1/2 tbsp sesame oil, add the beef mince and fry until browned, now add in the chopped veg, stir, then add in another 1/2 tbsp sesame oil, pinch of black pepper, the garlic puree, honey, rice wine vinegar, and 1 tbsp of the soy sauce. Stir together to soften the veg, now add in the cooked rice and keep stirring4Make a space and crack in the two eggs, let it set for moment and then stir it all together to scramble!5Now just add 1 more tbsp soy sauce and stir, then its ready!6To make the curry sauce, I used 100g curry paste, mixed with 300ml boiling water, microwave on short 1 minute blasts until thickened, stirring in between, or do it on the hob!#Beef#Under 30 mins#High proteinComments Sign in to leave a comment.Be the first to leave a note.
