Mini philly cheesecakes

Method

   Add the Philadelphia, along with the double cream, icing sugar, and vanilla essence into a mixer and mix until thickened; you can use a hand mixer for this too.

   Blitz the digestive biscuits in a blender, then remove and mix with the melted butter.

   Divide the biscuit and butter mixture evenly into 4 glasses/small bowls.

   Spoon the cheesecake mixture on top and spread to cover the biscuit.

   Add one sliced strawberry to each cheesecake.

   Mix the jam in a small bowl with a splash of water to thin it out slightly and drizzle it evenly onto each cheesecake.

   Put them in the fridge to set for a couple of hours and enjoy!
