One pot cajun sausage rice

Method

   Fry the sliced sausage in a little spray oil in a large pan

   Once the sausage starts to brown, add the onion and pepper

3. 3

   Soften for a few minutes, then add the garlic, 1 tsp of the Cajun seasoning and paprika

   Mix everything together, then add the rice, peas and tomatoes

5. 5

   Fill the empty tomato tin to the top with water and add this to the pan

   Give everything a good stir, season, and cover with a lid

7. 7

   Cook the rice for around 20 minutes, stirring occasionally

   Towards the end of cooking, add the rest of the Cajun seasoning and stir the plum tomatoes through

9. 9

   Cook for a couple more minutes and serve!
