Banoffee pies

Method

   Put the digestives in the bowl of a food processor and blitz until fine crumbs, or bash them by hand

   Melt the butter in the microwave and stir into the biscuit crumbs

   Spoon the buttery biscuit mixture into 4 bowls or large glasses

   Whisk the double cream until thick with soft peaks, then layer on top of the biscuit base

   Top the cream with banana slices and about 2 tsp caramel per bowl, smoothing it over with a spoon

   Let the desserts set in the fridge for at least a couple of hours, then serve
