Chimichurri Steak Fajita Sharer

   Rub steaks with 1 tsp olive oil, a pinch of salt, freshly cracked black pepper, ¼ of the fajita seasoning, 1 tbsp BBQ sauce, a drizzle of balsamic glaze, and an extra tsp fajita seasoning. Marinate for at least 30 mins. • Heat a little oil in a hot pan. Cook steaks to your liking (approx. 3 mins each side for medium). Remove and rest. • In the same pan, fry sliced peppers, onion, and mushrooms until softened, adding more oil if needed. • Stir in the remaining BBQ sauce and fajita seasoning, loosening with a splash of water if necessary. • Slice rested steak and add back into the pan, mixing through the veg and sauce. • Warm tortillas and serve with bowls of sour cream and cheddar for topping.
