Cajun Beef Chilli

Method

   Brown the mince in a frying pan with the beef stock pot or cube • Add the onion and the pepper and fry to soften • Add garlic purée, cajun seasoning, cumin, smoked paprika, cayenne, chilli flakes, and a pinch of salt and pepper, then mix together • Stir in tomato purée, passata, sugar, and kidney beans and mix well • Simmer for around an hour covered loosely, until thickened • Serve with rice or use in tacos/wedges

   NOTE - this is related to meal plan 2 so the chilli was used over two different dinners, but you can have a larger portion of course if using for one dinner.
