Chorizo tortelloni

Method

   Start by frying the chorizo in a dry pan, the oil from the chorizo will be enough!

   After a few minutes add the onion and minced garlic clove, fry together for a few minutes

   Now add the oregano and plenty of cracked black pepper

   Add the tomatoes and mash them down with a wooden spoon, add an extra splash of water to help it all along

   Add the sugar and tomato puree and simmer the sauce until it has thickened, don’t be afraid to add more water if it seems too thick

   Meanwhile, boil your tortelloni for a few minutes then drain and set aside

   Add the creme fraiche and the parmesan to the sauce and stir and heat through, now add in the cooked tortelloni and stir it all together

   Serve with some more parmesan on top and a sprinkle of parsley
