Classic bolognese

Method

   Brown the mince in a pan with the beef stock pot

   Once browned, add the mushrooms, onion, carrot, pepper and garlic

   Add the chilli flakes, oregano, and plenty of black pepper

   Stir well, then add the red wine (you could use white wine or Prosecco) and reduce for 5 minutes

   Add the fresh basil, along with the tomatoes, then fill both empty tomato tins halfway with water and add the water to the pan

   Add the sugar and tomato purée and stir, then cover with foil and leave to simmer for at least an hour until thickened

   Serve with your favourite pasta, garlic bread, and plenty of cheese!
