Spaghetti carbonara

Method

   Fry the bacon in a pan using a little spray oil

   Add the onion, mushrooms, garlic purée, a pinch of chilli flakes and some pepper and mix together

   Meanwhile, cook the spaghetti making sure you save some of the pasta water for later In a small bowl, mix the eggs with the Parmesan and a pinch of pepper

   Add the spaghetti and a splash of pasta water to the bacon mixture, mix and heat it all through

   Turn the heat off and add the egg mixture into the pan and stir well

   Serve with more Parmesan if you wish and enjoy!
