One pot philly cheesesteak rice

Method

   Fry the beef mince with some spray oil until it becomes crispy and brown - season with salt and pepper to taste

   Then add in the peppers and onion, and cook until softened

   Add in the smoked paprika, oregano, garlic, and rice

4. 4

   Mix until the rice is coated in the juices

   Add in the beef stock pot, and enough boiling water to cover the rice, then cover with a lid and simmer for around 15-20 minutes until the rice is cooked through - add more water if it’s not cooked by the time the liquid is absorbed

   Stir through the cream cheese, then top with the grated cheese

   Either cover with the lid and simmer a little more to just melt the cheese, or pop under the grill for 5 minutes to brown and melt the cheese
