Chicken tacos

Method

   Cut both chicken breasts in half lengthways to make them in to 4 pieces

   Put the chicken in a bowl and add the chilli flakes, 1/2 tsp cajun seasoning, paprika and chipotle paste and rub together until everything is combined

   Fry the chicken in a little oil in a large pan until browned on both sides, should only need a couple of minutes each side

   Add the garlic, onion and peppers and cook for a couple of minutes

   Add the chopped tomatoes, a splash of water, another 1/2 tsp of cajun seasoning and the barbecue sauce

   Let simmer until the sauce has thickened and the chicken is cooked

   Take the chicken out of the pan and shred it up with 2 forks

   Dip the mini wraps in to the sauce in the pan and set aside on a plate

   To assemble the tacos, put a pan on theheat and put a wrap down, followed by a little mozzarella and some chicken, then fold the taco over and cook until a little brown on both sides. Repeat for the others
