Pesto pasta salad

Method

   Start by butterflying the chicken breast, season with salt and pepper, add the harissa and cover all over

   Pan fry the chicken in a little spray oil until cooked on both sides, once nearly cooked through add the bacon to cook in the same pan

   Once cooked, slice everything up (I removed the fat from the bacon) and set aside

   Meanwhile, cook your pasta, drain and set aside

   Mix the cooled pasta with the chicken, bacon, rocket, tomatoes, mozzarella, red onion and some black pepper

   Once mixed together, add the mayo and pesto and stir well

7. 7

   Split into 3 portions and enjoy!
