One pot chicken pesto

Method

   Add a knob of butter to a large pan and turn on the heat

   Add the chicken breast pieces and seal, then add the onion, mushrooms and garlic along with plenty of black pepper

   Cook together for a few minutes, then add the stock and dried pasta

   Cook with the lid on for about 10 minutes, stirring halfway

5. 5

   After 10 minutes, the liquid should have reduced and the pasta will be just about cooked

   Add the cream cheese and pesto and stir well

7. 7

   Grate the parmesan in to the pasta and simmer until the sauce becomes thick and rich, then serve

   I used 600ml boiling water with one chicken oxo cube
