All recipesLasagne loaded jacket potatoesSave recipeJoin to planI cooked thisPrint cardYearly members: printable PDFIngredientsCooking for42 large potatoes250g beef mince2 small carrots, diced2 small white onions, diced1 tsp garlic purée1 tsp oregano1 tsp chilli flakes (optional)1 tin chopped tomatoes1 tsp sugar1 tbsp tomato purée1 beef stock cube100ml white sauce60g mozzarella, grated8 cherry tomatoesHandful of mixed leavesMethod1First stab the potatoes with a knife and microwave for 10 minutes, then spray with oil, sprinkle with salt and cook for 25 minutes at 200 in the airfryer (or you can cook for a little longer in the oven)2Meanwhile, make a quick bolognese (makes 4 portions) by browning the mince with the beef stock pot first3Then once browned, add in the onion, carrot and garlic and cook until softened4Add the chilli flakes (if using), oregano, and season with plenty of black pepper5Add the tomatoes, then fill the tin halfway with water and add that in too6Add the sugar and tomato purée and stir everything in, then leave with a lid on to simmer until thickened7Once your bolognese is done, your potato should be soft - take it out and cut it open8Add in some butter if you like, then add in your bolognese (use half and save half), some of the white sauce, and some mozzarella cheese on top9Pop back into the airfryer (or oven) and cook for another 5-10 minutes at 180 to melt the cheese and heat everything up10Serve with a side salad with your favourite dressing!#BeefComments Sign in to leave a comment.Be the first to leave a note.
