Slow cooker chilli rice bake

Method

   Cook off the beef mince until nicely browned

   In the bowl of a slow cooker add the beef, onion, peppers, garlic purée, tomato purée, spices, chopped tomatoes and Worcestershire sauce, season with salt and pepper

   Give everything a good mix, then cook on high for 3 hours

   After 3hrs add the rice and beef stock and mix. Cook for a further 45 minutes on high

   Top with the cheeses and jalapeños, cook for a further 10 minutes to let the cheese melt

   Top with the crushed Doritos and serve with your favourite toppings, like sour cream, salsa or guacamole!
