Braised red cabbage

Method

   Cut the cabbage into quarters, remove the core and chop it finely

   Add olive oil and fry the onion in the olive oil until softened

   Add the apple and stir for a few minutes, add the cabbage and keep stirring

   Next, add the balsamic vinegar, the brown sugar, a pinch of salt and pepper and a splash of water, stir well to combine

   Cover and let it slowly cook for up to 2 hours on a low heat, keep checking, stirring and adding splashes of water if needed

   Serve and enjoy! NOTE - you can always add extra flavours too like a pinch of cinnamon, all spice or star anise to give it a Christmas twist!
