All recipesPasta ClubMac and cheese20 min 4 portionsSave recipeJoin to planI cooked thisPrint cardIngredientsCooking for4300g dried pasta80g red Leicester cheese, grated100g cheddar, grated25g butter25g plain flour450ml semi skimmed milk20g Parmesan, grated1 tsp English mustard (optional)Method1Start by boiling the pasta in salted water until just al dente (around 9 minutes), drain and set aside2In a large pan, melt the butter, add the flour and whisk together for a few minutes to form a paste. Gradually start adding the milk, keep whisking and adding more milk until it starts to thicken (takes around 10 minutes)3Now turn off the heat, add the mustard, a pinch of salt and pepper, and 3/4 of the red Leicester cheese and cheddar4Stir until cheese has melted, add the cooked pasta, stir again to coat. If it seems a little thick, you can add a splash of water or milk!5Add to a dish, sprinkle remaining cheese on top as well as the parmesan6Place under the grill until bubbling and golden!
