Katsu chicken curry

Method

   Butterfly the chicken breasts and wrap in greaseproof paper or cling film, then bash until thin

   Coat in the flour, then the egg and then the breadcrumbs

   Fry in a little olive oil until golden on both sides, about 5 minutes each side

   Transfer to an oven set at 180°C for about 10 minutes or until fully cooked

   Slice up the chicken and cover in the curry sauce, then serve with boiled rice
